現(xiàn)在來做錦繡拼盤。將黃瓜、胡蘿卜、火腿腸切成薄片,刀工講究均勻透亮;再把煮熟的雞蛋剝殼,用細(xì)線勒成花瓣形狀。取一只白瓷圓盤,先將黃瓜片沿盤邊層層疊放成荷葉邊,胡蘿卜片斜鋪成放射狀紋路,火腿腸卷成玫瑰花朵,錯(cuò)落點(diǎn)綴其間。蛋瓣在中央聚攏成菊,蝦仁焯水后圍作珠鏈,最后淋上秘制醬汁——生抽、香醋、芝麻油調(diào)勻,再撒一把熟白芝麻。紅黃綠白相映,如錦繡鋪陳,又似春日花園,端上桌時(shí)滿室生香。
